Cheezy Tahini Roasted Cauliflower

Perfect roasted cauliflower that uses tahini and spices to give this a delicious savoury, cheezy flavour.

Perfectly roasted cauliflower with no oil. I’ve tried out a few different ways of roasting cauliflower without oil and this is the winner! It’s savoury, cheesey and so simple, just mix up your spice/tahini mix, add the chopped cauli and spread it out on a tray to bake.

This recipe uses tahini to add a whole food form of fat to help these brown beautifully, then they’re given a cheesey flavour with nutritional yeast and onion granules/powder and a bit of turmeric for colour (and because it’s such an amazing spice health-wise). I never would have thought I could eat a whole head of cauliflower myself but when it’s roasted and flavoured like this it’s hard to stop eating!

Cheezy tahini roasted cauliflower makes a great side or snack or can be part of a buddha/nourish bowl.

I use Macro organic hulled tahini - it’s made with roasted sesame seeds which gives it a richer almost buttery flavour. Before I found this brand I thought I just didn’t like tahini - other ones I’ve tried have been too bitter for me.

Cheezy Tahini Roasted Cauliflower

Perfectly roasted Cauliflower with no oil! This cheezy tahini roasted cauliflower is vegan, wholefood plant based, dairy free, gluten free and oil free.

Ingredients

1 small head of cauliflower (500g) 1 Tbsp tahini 1 ½ Tbsp unsweetened soy milk (or milk of choice) 3 Tbsp nutritional yeast ¼ tsp salt ½ tsp onion granules or powder ⅛ tsp turmeric ⅛ tsp black pepper

Directions

  1. Chop up your cauliflower into bite sized pieces and add to a large mixing bowl.
  2. Mix all other ingredients together in a small bowl (tahini, soy milk, nutritional yeast, onion granules, salt, turmeric, pepper).
  3. Add the tahini mixture to the cauliflower and mix through until all the cauliflower florets are coated - as the mixture is quite thick it helps to use your hands to mix it all around.
  4. Spread the cauliflower florets out on a large baking tray that has been lined with baking paper.
  5. Bake at 200°C (390°F) for 20 minutes or until golden brown and cooked through.
