Basic Banana Bread
This is a very quick and easy banana bread recipe. So easy that my four year old can almost do it by himself! The only problem is if I let him he’d eat all the mix before we had a chance to cook any (bonus of eggless baking!). I used to add chocolate chips to things like this but I found that turned my kids into chocolate hunters, just picking out the chocolate chips and leaving the rest. Without the chocolate chips they’ll happily eat slice after slice.
This banana bread is sweet but not too sweet, light and moist. Enjoy!

Ingredients
1 c rolled oats ground into a flour 1 c white flour 1 tsp baking powder 1 tsp baking soda ¼ tsp salt (optional) 2 large bananas - mashed (around 1 cup) ½ c plain unsweetened yoghurt (I use soy) ⅓ c sugar (I used coconut sugar but any should work) 1 tsp vanilla essence 1 tsp apple cider vinegarDirections
- Start by preheating the oven to 180°C (350°F).
- Next prep the tin. Either grease it or line with baking paper (I used oil spray this time)
- Place all the dry ingredients in a medium/large mixing bowl, and stir.
- Now mash the banana. I put banana on a large plate and mash with a fork.
- Add the mashed banana and all other wet ingredients to a separate mixing bowl and stir.
- Add the wet mixture to the dry, and stir to combine. Stop stirring as soon as there are no big clumps of flour - do not over mix.
- Pour into prepared loaf tin and bake for 25mins, or until lightly browned and a skewer inserted into the center comes out dry.
