Raisin Oat Cookies

Sweet caramel flavoured raisin oat cookies that come together in a flash. Only six ingredients and one bowl (plus a blender or grinder to grind the oats).

I’ve tried these with both raisins and chocolate chips, to my surprise I much preferred the raisin option!

I have used almond butter as the fat source in these cookies. Almond butter is a great whole food source of fat for baking which also adds a lovely, subtle, nutty flavour.

Raisin Oat Cookies

Ingredients

⅓ c almond butter ¼ c unsweetened soy milk (or any milk should work) 1 ½ c rolled oats ¾ tsp baking powder ½ c coconut sugar (or brown sugar) ¼ tsp salt (optional) ¼ c raisins

Directions

  1. Preheat oven to 180°C (350°F) and line or grease a baking tray.
  2. Grind 1 cup of the rolled oats into a flour in a coffee/spice grinder, high speed blender, or food processor.
  3. Add the almond butter and soy milk to a bowl and mix together until smooth.
  4. Add the oat flour, the remaining oats (½ cup), baking powder and coconut sugar and stir until well combined.
  5. Stir through the raisins.
  6. Shape into balls (using approximately 2 Tbsp of mixture for each ball) and place on baking tray leaving a 2cm space between each one.
  7. Flatten balls slightly with a fork - dip the fork in water to prevent it sticking to the cookie dough.
  8. Bake in the centre of the oven for 12-15 mins or until just starting to brown on the bottom.
  9. Cool on a cooling rack and enjoy!
