Energy boosting smoothie
Recently I’ve had to be out all morning with the kids a few times which means I miss my mid-morning coffee! This was a disaster the first day. I was barely functioning by 11am and a complete zombie when we finally got home at lunch time. The next day I decided to try this green smoothie along with a small bowl of my usual Toasted Muesli. I had so much more energy and I was still completely fine when we all got home around lunchtime.
Along with it’s energy boosting power, it’s also a great way to get some greens into kids. If this is your (or your child’s) first time trying a green smoothie it’s a good idea to start with about half the amount of spinach and add a little more each day. If you have a high speed blender you can also make this with half the water to make a thicker pudding-like smoothie. My daughter likes it this way served in a bowl with a spoon.
This recipe makes enough for a large glass for me and 2 small glasses for my kids.

Ingredients
1 banana 1 c baby spinach (packed) ½ c frozen mango chunks 1 orange (optional) 1 Tbsp ground flaxseed (if you have a high speed blender you can use whole flaxseeds) ¼ c unsweetened soy yoghurt (or yoghurt of choice) 1 c waterDirections
- Peel and roughly chop the banana and orange.
- Place all ingredients in your blender jug and blend until smooth. (I find the order they’re listed in works best for my blender - otherwise the spinach doesn’t blend fully)
- Pour into one or more glasses and serve.
