Recently I’ve had to be out all morning with the kids a few times which means I miss my mid-morning coffee! This was a disaster the first day. I was barely functioning by 11am and a complete zombie when we finally got home at lunch time. The next day I decided to try this green smoothie along with a small bowl of my usual Toasted Muesli. I had so much more energy and I was still completely fine when we all got home around lunchtime.

Along with it’s energy boosting power, it’s also a great way to get some greens into kids. If this is your (or your child’s) first time trying a green smoothie it’s a good idea to start with about half the amount of spinach and add a little more each day. If you have a high speed blender you can also make this with half the water to make a thicker pudding-like smoothie. My daughter likes it this way served in a bowl with a spoon.

This recipe makes enough for a large glass for me and 2 small glasses for my kids.

Energy boosting smoothie

This green smoothie is creamy with just the right level of sweetness. It will give you plenty of energy to get you through the morning.

Ingredients

1 banana 1 c baby spinach (packed) ½ c frozen mango chunks 1 orange (optional) 1 Tbsp ground flaxseed (if you have a high speed blender you can use whole flaxseeds) ¼ c unsweetened soy yoghurt (or yoghurt of choice) 1 c water

Directions

  1. Peel and roughly chop the banana and orange.
  2. Place all ingredients in your blender jug and blend until smooth. (I find the order they’re listed in works best for my blender - otherwise the spinach doesn’t blend fully)
  3. Pour into one or more glasses and serve.
