Creamy Banana Porridge

This deceptively simple recipe makes a warm and comforting breakfast, prefect for cold winter mornings.

The banana ‘melts’ into the porridge as it cooks, making every spoonful perfectly sweetened, with a lovely banana flavour. It also means this recipe has no added sugar, as well as being dairy free and vegan.

My kids love this with some frozen blueberries mixed in at the end. Which, as well as being delicious and nutritious, also quickly cools the porridge down to the right temperature for them.

You could also try adding chopped nuts, chia seeds, ground flaxseed, coconut or fresh fruit.

Creamy Banana Porridge

Cook time: 3-5 minutes

Ingredients

1 very ripe banana ½ c rolled or quick oats 1 c water ¼ c unsweetened soy yoghurt (or your choice of yoghurt)

Directions

Microwave method:

  1. Slice the banana
  2. Place the banana, oats and water into a large microwave safe bowl and microwave for two minutes.
  3. Stir and microwave in 30 second bursts, stirring in between until cooked to your liking.
  4. Stir through the yoghurt and add any extras you like - fresh fruit, frozen berries, ground flaxseed, chia seeds, nuts etc.

Stovetop method:

  1. Cut the banana into large slices (around 2cm thick)
  2. Place the banana, oats and water into a medium sized pot and bring to a boil.
  3. Let it simmer for 4-5 minutes, stirring occasionally until it is thick and the banana has “melted” (if your banana isn’t softening, add a couple more tablespoons of water, stir through then put a lid on for a minute or two).
  4. Stir through the yoghurt and add any extras you like - fresh fruit, frozen berries, ground flaxseed, chia seeds, nuts etc.

*Note: If making a larger batch than this recipe I recommend using the stove top method as it takes a lot longer to cook a larger batch in the microwave. Also make sure your bowl is quite large and never cook for more than 2 minutes at a time in the microwave - it expands as it cooks and it can make quite a mess of your microwave!
